Bacon-Wrapped Asparagus

Looking to jazz up your asparagus? I wanted to ‘fancy up’ our steak dinner, and found this special way to cook asparagus in the Easy Keto for Busy People book by Jennifer Marie Garza. This is SO easy, and delicious!!

1 pound asparagus

6-12 slices bacon

6 tbsp butter

1 tbsp sugar-free syrup

1 tsp soy sauce or coconut aminos

Preheat oven to 400. Line a rimmed baking sheet first with foil, then with a sheet of parchment paper. (This sounds like over-kill, but it makes so super easy clean up!)

Trim asparagus, rise and pat dry. Wrap a slice of bacon in a spiral around each stalk of asparagus, cut the bacon in half if it is too long. Arrange the asparagus on the baking sheet, make sure they do not touch.

In a small saucepan melt the butter with syrup and soy sauce. Cook until a bit thick and bubbly. Baste the asparagus with the syrup mixture.

Bake for about 20 minutes, until the bacon becomes brown and crispy.

Sure this is more complicated than grilling or roasting, but I promise you it is worth it! Lee was thanking me the next morning…he loved it soooo much!
