Ina Garten’s Tomato Bisque

My second selection from Ina’s new cookbook: Modern Comfort Food, was Tomato Bisque.

I love Tomato Soup, and during her virtual book tour (See: Sharpening Your Saw) she spoke about how this was an elevated version of Tomato Soup. I was excited to try it!

I made a couple of changes to Ina’s recipe:

1) I reduced the milk from 4 C to 3 C

2) I used my Immersion Blender to puree the soup once it had simmered for 30 minutes. I prefer a smoother tomato soup, but you can choose what you like best. [The Immersion Blender is an expensive tool, but incredibly useful if you make a lot of soups and sauces, like I do! You can also pour the mixture into a blender or a food processor, it will work the same.]

Lee and I loved the soup! The recipe makes a lot, so I was able to share it with Lee’s parents too. My Mother In-Law’s review was very positive!!

The base of the soup is leeks, onions, and shallots.

This creates a deep rich flavor.
