Mashed Cauliflower

I love the versatility of cauliflower. It was a tougher ‘sell’ for Lee. Now, he has learned to enjoy it.

Many of the dishes I have been making have wonderful sauces, and these are best enjoyed with something else. I created this simple recipe for just these days.

1 bag of riced cauliflower (I love Green Giant because you can steam it right in the bag!)

4 tbsp butter

2 tbsp cream cheese

1/4 heavy cream or sour cream

1/4 c cheese (Choose cheddar, colby jack, parmesan just about anything you like.)

salt & pepper to taste

fresh chives (if you have ‘em!)

Cook the riced cauliflower per the package directions. The Green Giant is steamed in the bag for about 5 minutes. Pour out the cauliflower into a large bowl. Add all of the ingredients, and mash them together. I use a pastry blender, you can use a potato masher if you like. As you mash, the butter, cream cheese, and cheese will soften and melt. I taste it, and season as needed. I then add other seasonings that ‘go’ with the main dish-oregano/basil if it I want an Italian flair, cumin/coriander if I want a Mexican flavors, you get the idea!
