Taco Bites
As you know Taco Tuesday is a celebration at our house. I love trying to find new recipes to surprise Lee on Tuesday night. I found these ‘Taco Bites’ in Easy Keto for Busy People-by Jennifer Marie Garza. She continues to supply us with great delicious choices that are healthy and keto friendly!
1 lb. ground beef
1 tbsp chili powder
1 1/2 tsp ground cumin
1 tsp salt
1 tsp black pepper
1/2 tsp paprika
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp oregano
1/8 tsp crushed red pepper
Pocket Dough (recipe follows…)
1 1/2 c shredded cheddar cheese (Feel free to try different cheeses, Monterey Jack, Colby or Provolone)
Preheat oven to 350
Spray a 24-cup mini-cupcake pan with non-stick spray
In a medium skillet, cook the ground beef until browned. Add all of the spices and stir to combine. Let cool.
Make the Pocket Dough. Roll out dough between two sheets of parchment paper to about 1/4” thick. Use a 3” round cutter or a 3” glass to cut out 24 rounds. Gather scraps and continue rolling out all doing until you have 24 rounds. Press one round into each cup. Spoon 1 tbsp of seasoned ground beef into each dough-lined cup. Top ground beef with about 1 tbsp shredded cheese.
Bake for 10-15 minutes, until golden brown.
Serve with hot sauce, sour cream, guacamole, and chopped green onions.
