New Year’s Eve 2020
For the past few years Lee and I have had small New Year’s Eve parties. Like most of you, we had a ‘Zoom’ Christmas, so NYE would be just the two of us as well. At first I thought we could just do a ‘regular’ dinner. As I started thinking about it I realized that we both needed a ‘special’ night, with a special menu. I found lots of great things on sale in our area. I found lobster tails for $3.99! I found beef tenderloin for $4.99! Our Surf & Turf menu was born!
In the past I have boiled the tails, but I wanted to try something new. I asked the woman behind the fish counter for advice. She recommended cutting the shells (top and bottom) first, and then put them under the broiler. I used kitchen scissors and cut vertically up the underside of the tail, and then through the shell on the top. Then I poured my ‘garlic butter’ (see below) into the top opening. I put them under the broiler for about 6-8 minutes.
Next time I will try grilling them, maybe it would be even easier!
The result was a lovely dinner of broiled lobster tails, grilled beef tenderloin, and grilled asparagus!
Garlic Butter
4 cloves minced garlic
1 stick (1/2 c) melted butter
1 tbsp lemon juice
1/4 tsp salt
1/4 tsp pepper
Mix everything together, and pour into the tops of the tails before placing under the broiler.
