Our Wedding Anniversary
Lee and I celebrated our 15th wedding anniversary last week! It seems crazy that we have been together for 15 years. At the same time, it also seems like we have loved each other forever.
To celebrate I decided we needed a healthy Keto cake. A few weeks ago, I received an amazing box of treats from Swerve. I received 3 Swerve sugars (granular, confectioners, and brown), coupons for more Swerve products, and 2 Swerve cake mixes, and recipes to ‘spice’ up their cake mixes. What a fun gift!
I decided to use the Vanilla cake mix, and follow the Vanilla Spice Cake and frosting recipe they provided. The results we great! Lee loved the cake!! It felt great to enjoy our anniversary cake, and have zero guilt for our indulgence!
1 box Swerve vanilla cake mix (their mixes are gluten-free, and keto)
1 1/4 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/2 tsp allspice
1/8 tsp ground cloves
1/2 c brown sugar Swerve
1 tbsp vanilla
2 eggs
1/4 c unsweetened apple sauce
1/2 c canola or coconut oil
1/8 c water
Preheat oven to 350, and grease 1 9” round cake pan, then line the bottom of the pan with parchment paper, set aside.
Whisk together cake mix, and all of the spices.
In a separate bowl, whisk brown Swerve sugar, vanilla, eggs, apple sauce, oil, and water until well combined. Add dry mixture to wet mixture, and mix until combined. Pour batter into prepared pan.
Bake for 25 minutes, then cover the cake with aluminum foil and return to oven and bake for 10 more minutes. Cake is ready when a toothpick is inserted and comes out clean.
Let the cake cool completely. Then use a knife and loosen the cake, and flip the cake over onto a cooling rack. Flip it back over onto the a cake plate. Frost with Swerve cream cheese frosting.
1/2 c unsalted butter, room temperature
8 oz. cream cheese, room temperature
3/4 c Swerve confectioners sugar
1 tsp vanilla
1 tbsp milk of choice (I used almond)
Beat butter and cream cheese in a mixer, on medium-high, until fluffy (about 2-3 minutes)
Reduce speed to low, and gradually add Swerve confectioners sugar. Add vanilla and milk, mix until smooth.
Increase speed to high, beat for another 4-5 minutes until well combined and fluffy.
Frost the cooled cake.
