A New Twist on Taco Tuesday
Every Tuesday, I look for a new fun (healthy) way to make tacos. I’ve been looking for a way to make a no-carb taco shell, and I found an incredibly simple recipe. I already have a plan to improve upon it next week.
2 c shredded cheese
1/2 tsp ground cumin
Preheat oven to 400. Line two sheet pans with parchment paper.
Mix cheese and cumin in a bowl. Form 6-8 piles of cheese on baking sheets. Leave plenty of room in between piles or cheese might melt together.
Bake for 10-15 minutes until cheese is bubbling-watch carefully it can burn! Be careful not to overtake, the cheese will get too firm. Let cool for 30 seconds.
Place a cooling rack over the sink. Carefully, place the cheese ‘tortillas’ over the cooling rack. Allow the edges of each round to drape down between the bars of the rack, forming the taco shell. Let cool completely, serve with the fillings of your choice.
