Keto Calzones

Another great recipe from Jennifer Marie Garza’s book Easy Keto for Busy People

These are great meal, best served with a salad for a great dinner. Be sure to roll the dough out 1/4”. I did not get it rolled out thin enough, and the calzone had too much dough and not enough filling.

8 ounces ground beef

2/3 c shredded cheddar cheese

3 tbsp marinara (make your own or use a low sugar jarred sauce)

1 3/4 c shredded mozzarella cheese

3/4 c almond flour

1 egg

Preheat oven to 350. Line baking sheets with parchment paper.

Cook ground beef until it is browned. Add the cheddar and marinara and mix until well combined.

In a microwave bowl, heat mozzarella for about 1 minute. Add almond flour and egg and mix until combined. Place the dough on parchment paper and knead until it comes together. Place another sheet of parchment paper on top of the dough. Use a rolling pin to roll out the dough to a 6” X 8” rectangle, to about 1/4” thick. Cut the dough into 12 (2” squares).

Place about 1 tbsp of the beef mixture in the center of each dough square. Be sure to keep the edges free of sauce, so the dough will stick together. Fold the dough over to form a triangle and press the edges together with a fork to seal them. Continue with all 12 calzones.

Bake for 15-20 minutes, until golden brown. Serve hot, with a side of marinara (if desired).
