Cauliflower and Bacon Au Gratin

Salads and raw veggies make great sides in the summer, but in the fall and winter I love a warm side dish. This cauliflower au gratin is perfect with burgers or steaks!

10 slices of bacon, cooked and crumbled (fat reserved)

1 c heavy cream

3 tbsp cream cheese, cut into small pieces

3 tbsp chicken broth

2 tbsp butter

2 c shredded cheddar cheese

1 tsp hot sauce

1 tsp salt

1 tsp pepper

1/2 tsp nutmeg

1 (16 ounce) bag of cauliflower, thawed and cut into small pieces

Preheat oven to 350. Spray 13” X 9” baking dish with cooking spray.

In a large skillet over medium heat, mix together the reserved bacon fat, cream, cream cheese, broth, and butter. Cook, stirring constantly, until the cream cheese has melted. Add 1/2 c cheddar cheese, hot sauce, salt, pepper, and nutmeg. stir until blended.

Place cauliflower in the prepared baking dish and spread out evenly. Pour cheese mixture over the cauliflower. Sprinkle with remaining 1 1/2 C cheddar cheese. Sprinkle the crumbled bacon over the top.

Bake the casserole for 35 minutes, until it is golden brown and bubbly.

This delicious side will compliment any entree!!
