Tuscan Chicken

Sometimes you need a warm, creamy, chicken dinner…here it is! Again, I found this in Jennifer Marie Garza cookbook Easy Keto for Busy People. This is easy to pull together and all in one pan!

2 skinless boneless chicken breasts

3 tbsp lemon-pepper seasoning

2 tbsp olive oil

1/2 onion diced

1/2 c chicken stock

5 tbsp minced garlic

1 c heavy cream

1/2 c grated parmesan cheese

1/2 tsp dried basil

1/2 tsp oregano

3 c baby spinach

5 ounces sun-dried tomatoes, cut into julienne strips

Season the chicken on all sides with the lemon pepper seasoning.

In a large skillet, warm the olive oil over medium/high heat. Add the chicken and cook turning once, until cooked all the way through (8-12 minutes). Transfer to a plate and set aside.

To the same skillet, add the onion and cook stirring occasionally, until translucent (3-5 minutes). Add the stock and garlic, use a spoon to scrape up any brown bits that may have stuck to the bottom of the pan. Pour in the cream and add the parmesan cheese, and Italian seasonings. Stir until the cheese melts and all ingredients are incorporated.

Lower the heat to medium-low and add the spinach and sun-dried tomatoes. Let the spinach wilt and the sun-dried tomatoes heat through (3-5 minutes). Add the chicken to mixture and serve with a little sprinkle of parmesan cheese.
