Cauliflower-Creamed Spinach

I love spinach! Especially with a nice roasted meat. (Look for Pork Roast!) I found this recipe in Easy Keto for Busy People. I loved how this turned out, delicious!!

1 head of cauliflower, cut into florets

2 tbsp heavy cream

1 tbsp butter

1/2 tsp salt

1/4 tsp pepper

1 tbsp olive oil

1 small onion, diced

5 ounces baby spinach

1/2 c shredded mozzarella cheese

1/2 tsp nutmeg

pinch of ground cloves

Bring a large pot of water to a boil. Add cauliflower and cook until tender, about 10 minutes. Using a slotted spoon, transfer to cauliflower to a food processor. Add the heavy cream, butter, salt and pepper; pulse until smooth.

Heat the oil in a large cast-iron skillet over medium heat. Add the onion and cook stirring until translucent. Add the spinach, mozzarella, nutmeg, and cloves; mix to combine. Add the cauliflower puree, and cook stirring until heated through.

Place the skillet under the broiler for 3-4 minutes until the cheese has browned.
