Hopple Popple

Lee and I have been married for 15 years, and he just told me about this delicious meal! It is a simple one-pan meal made with onions, pepperoni or salami and eggs. Lee suggested it for dinner after I had been painting all day. He also offered to make it! I found a wide variety of recipes for this, once you’ve made our version add anything you like!

My mother in-law told me this is a dish typically found in a Jewish Deli. Their version has chunks of salami.

1 medium onion chopped (large dice)

10 slices of pepperoni or salami (large dice or large strips)

5 eggs

1/4 c cheddar cheese

Heat a large pan (medium heat), add 1 tbsp butter and 1 tbsp olive oil. Once that is heated, add the onions and saue until softened. Add pepperoni and continue to saute until slightly browned.

Beat the eggs in a bowl, and add salt & pepper to taste. Add the egg mixture to the onions and pepperoni in the pan. Stir the mixture until cooked, add the cheese right before removing from the heat.
