Chai Tea Latte

I miss lots of things that I used to do. One of them was going to Starbucks for a cup of tea with a friend. I also love Chai Tea, but I avoid it due to the sugar in them. Then I started thinking maybe I could make this myself, and leave out the sugar! I looked up what is in Chai Spice, and created my own.

I promise you will not miss the sugar, the depth of flavor and richness are all you need!

Hot Chai Latte

CHAI SPICE

1” peeled, fresh ginger cut into slices

5 whole cloves

1/2 tsp cardamon or 5 cardamon pods

2 cinnamon sticks

2 whole star anise

1 tsp vanilla extract

1/2 tsp allspice

1/2 tsp nutmeg

a pinch sea salt

3 black tea bags

Pour 2 C water into small saucepan over high heat. Add everything, except for the tea bags. Bring to a boil, then add tea bags and cover for 45 minutes.

Strain the mixture through sieve, and discard the solids. Let cool, and store in airtight container in the refrigerator for a week or so.

When you are ready to make your latte:

Heat 3/4 C heavy cream and 1/2 C almond milk in a small saucepan over medium heat. Stir frequently, until the mixture starts to steam-do not boil. Add 1/4 c Chai Spice, remove from the heat.

I also like to add a dollop of Cool Whip and a sprinkle of cinnamon so it is fancy!

Bring to a boil, add tea bags, and steep for 45 minutes.
