Low-Carb Pigs in a Blanket
Everyone loves pigs in a blanket, whether for dinner or a game time snack. These allow you to enjoy a childhood favorite with only 4 carbs!
If you are following along with me, this recipe will look familiar to you. This is a similar recipe for many Keto recipes.
Low-Carb Pigs in a Blanket
1 3/4 C shredded mozzarella cheese
3/4 C almond flour
2 tbsp cream cheese
1 egg
4 hot dogs
Preheat oven-350
In microwave safe bowl mix together mozzarella cheese, almond flour, and cream cheese. Heat in microwave for 1 minute, or until cheese is melted. Add the egg and mix into other ingredients until they come together into a dough. Let cool for 2-5 minutes.
Place parchment paper on the counter, and place the dough on the paper. Then place a second sheet of parchment on top of the dough. Using a rolling pin, roll the dough into a rectangle (13” X 9”) and 1/4” thick. With a pizza cutter, cut the dough lengthwise into 1” strips. (I roll the leftover dough into balls, and bake them. They make delicious biscuits!)
Wrap one strip around one end of the hot dog in a spiral, until the dog is covered. Finish wrapping all of the hot dogs.
Place wrapped hot dogs on a baking sheet covered with parchment paper. Bake for 20 minutes, until golden brown.
Serve with ketchup and mustard.
