Chicken Cordon Bleu Casserole

We love chicken, and I am always looking for new ways to serve it. This recipe is a great dinner, and great for a football game too. Lee rated this a “9”!!

This recipe is from Jennifer Marie Garza’s book Easy Keto for Busy People.

2 skinless, boneless chicken breasts (6 ounces) Cooked and shredded. (Or you can substitute a roasted chicken, and shred the meat.

1/2 c sour cream

1/4 c heavy cream

2 tsp dijon mustard

salt & pepper

8 ounces sliced ham, chopped

4 ounces cream cheese, cut into pieces

8 ounces sliced Swiss cheese

1 c almond flour

1/2 tsp dried oregano

1/2 tsp dried basil

8 tbsp butter, cut into pieces

Preheat oven 375. Spray 13 X 9 pan with cooking spray.

In a large bowl, mix together chicken, sour cream, heavy cream, mustard, 1/2 tsp salt, 1/4 tsp pepper.

Transfer mixture to prepared baking dish, spread out evenly. Top with ham and cream cheese pieces. Cover the top with slices of Swiss cheese.

In a small bowl, mix together the almond flour, seasonings, 1/2 tsp salt, 1/4 tsp pepper. Sprinkle this mixture over the top of the Swiss cheese. Top with pieces of butter.

Bake for 30 minutes, until bubbly. If you prefer a browned topping, place under the broiler for about 2 minutes.
