Low-Carb Pork Chops with Gravy

Like many of you, we have been craving comfort foods. I decided pork chops with gravy would be delightful! Here is what I created.

4 boneless pork chops

Olive oil

1/2 c crushed pork rinds

1 egg

1/2 c heavy cream

1/2 c chicken broth

1/4 c heavy cream

3 oz. cream cheese, softened

1/2 tsp pepper

Heat a skillet, and then add 3 tbsp olive oil.

Place crushed pork rinds on a plate. In a shallow bowl whisk egg and heavy cream. Dredge pork chops in eggs wash, and then in the pork rinds. (Set this aside for at least 15 minutes, the longer you can wait, the crispier your chops will be!)

Place pork chops into heated skillet. Saute each side 3-4 minutes, until golden brown. When fully cooked, place on paper towel and keep warm until gravy is ready.

Gravy

Deglaze the skillet with the chicken broth. Add heavy cream, cream cheese, and pepper, Whisk until combined. bring to a boil, then reduce to medium for 5 minutes or until the gravy thickens. Remove from the heat.

Place the pork chops on a plate and pour the gravy on top. I served this with ‘Mashed Cauliflower’, which helps you really enjoy the gravy!
