‘Mashed’Cauliflower
I love all the ways cauliflower can be adapted to create low carb delights! Try this great low-carb version of mashed potatoes!
1 12 oz. pkg. of riced cauliflower
3 tbsp butter
1/4 c shredded cheddar cheese (Try any cheese you like, I have used mozzarella, parmesan, and provolone.)
3 tbsp heavy cream
salt & pepper to taste
Place the frozen riced cauliflower in a microwave safe bowl. Microwave on high heat for 5 minutes.
Add butter, cheese, cream, and salt & pepper. Mash (using a potato masher) or blend with an immersion blender until smooth. (I prepared this ahead of time, and filled a small casserole dish.) While I am preparing the protein, I reheated the dish in a 375 degree oven for 15-20 minutes, until pipping hot.
