Tastes Just Like Potato Soup
In the winter I love a great bowl of soup. There is nothing like a warm bowl of soup to brighten a winter day. I am always looking for delicious soup recipes. I found this one in Jennifer Marie Garza’s book Easy Keto For Busy People.
1 head of cauliflower, cut into florets (or a 10 oz bag of frozen riced cauliflower to save time)
4 ounces of radishes, trimmed and quartered (about 6 radishes) (Even if you do not like raw radishes, try them in this. In this recipe when they are roasted, the radishes take on a creamy potato-like texture. Wild!)
2 tbsp olive oil
1 tsp salt
1/2 tsp pepper
4 c chicken stock
3 tbsp minced garlic
2 ounces cream cheese
1 tsp paprika
1/2 c full fat coconut milk or heavy cream (or you can omit this, it is delicious without it)
Preheat oven to 400
Spread out cauliflower and radishes on a baking sheet, drizzle with olive oil and season with salt and pepper. Roast for 30-35 minutes, until tender.
Transfer roasted vegetables to soup pot. Stir in the broth, garlic, cream cheese, and paprika, and bring to a boil over medium heat.. Then simmer for 10 minutes. Remove from the heat, and let cool for 5 minutes.
Puree the soup in a blender (or with an immersion blender right in the pot), until smooth. Add coconut milk or heavy cream.
Serve with bacon and cheddar cheese.
