Keto Pizza

Lee LOVES pizza. When we first got married we decided that Sunday night would be pizza night. We would typically order from one of our favorite places and enjoy pizza every Sunday night.

Now that we are eating keto, I needed to find another way for us to enjoy pizza. Of course my answer was in Jennifer Marie Garza’s book Easy Keto for Busy People.

1 3/4 c shredded mozzarella cheese

2 tbsp cream cheese

3/4 c almond flour

1 egg

1 tsp seasoning (Jennifer recommends rosemary. I prefer dried basil and oregano!)

Preheat the oven to 350.

In a microwave-safe bowl, heat mozzarella, cream cheese, and almond flour for 1 minute or until the cheese melts. Mix together until completely combined. Add the egg and seasoning, and mix until it forms a very sticky stiff dough. Let is cool for about 5 minutes.

Divide the dough into 2 equal parts. Place one piece of dough onto a sheet of parchment paper, and place another sheet on top. Using a rolling pin, roll out the dough in the shape of your pan. (Mine is a sheet pan, so I roll it into a rectangle.) Slide the parchment with the dough onto the pan. Roll out the second dough and bake it or freeze it for next Sunday.

My method for baking differs from Jennifer’s. I bake the dough without toppings to create a crispier crust. If you like a doughy crust add your toppings and bake for 12-15 minutes.

For a crisp crust, place the pan in the oven for 6-8 minutes or until light gold. Then flip the crust over and put it back into the oven for another 6-8 minutes. Then add your toppings and bake for another 10-12 minutes or until your cheese is bubbly.

I know this may sound like a lot of work, but the pizza is delicious and satisfying!!
