Zucchini Crisps
When looking for healthy side dishes, I created this super easy side dish. There are only two ingredients-zucchini and parmesan cheese. Try it, it is SO easy! I often make it with salmon, because the oven temperature works perfectly, and they can cook together in the oven.
1-2 Zucchini, washed, and sliced into 1/2” thick ‘coins’
1 C Parmesan Cheese
Preheat oven to 425. Prepare baking sheet by covering it with parchment paper.
Drop about a tbsp of parmesan cheese on baking sheet for each zucchini ‘coin’. Space them about 1-2” apart (they do spread a bit). Place a zucchini ‘coin’ on top of each parmesan tbsp. Then place another tbsp of parmesan on top of each zucchini ‘coin’. (You basically have a ‘sandwich’ with parmesan as the bread and zucchini as the filling!)
Place them in the oven for about 10 minutes, or until the parmesan is golden brown.
