Perfect Salmon

For years I thought I did not like salmon. I would typically have salmon at a restaurant or a wedding, and it was over-cooked and dry. I decided I wanted to give salmon a real chance, so I needed to make it myself. My recipe is simple, give it a try. You may find that you love it just like I do…now.

Purchase salmon with skin on. For 2 of us I buy a one pound piece, and cut it in half before cooking.

Season salmon with salt and pepper, both sides.

Preheat the oven to 425.

Heat an oven-proof pan on med/high for 4 minutes.

Turn heat down to medium, and place the salmon in the pan skin-side down. 2 minutes.

Turn salmon, and place in the preheated oven for 6 minutes.

When you take it out the filet will be perfectly cooked and a glorious golden brown.
