Cauliflower ‘Mac’ & Cheese
I think we are all looking for comfort food this time of the year. I know I am! This recipe is one of my favorites, and still keto! You can serve this as an entree or as a side dish. My favorite way to make this, is to make it ahead and refrigerate it. During the week on that one night you are too tired to cook…..it is ready in 15 minutes! Preheat the oven, and pop it in, and 15 minutes later dinner is served!!
1 head cauliflower, broken into small florets
1/4 of an onion, diced
6-8 slices of bacon, in large dice
1 c heavy cream
2 tsp dijon mustard
1 1/2 c cheddar cheese, shredded
1/8 tsp garlic powder
salt & pepper to taste
Preheat oven 375
Render bacon in a large sauce pan, drain on a paper towel.
Leave fat in pan, turn down the heat to medium. Add cauliflower & onions. Saute until a bit soft, 10-15 minutes.
Spray 8 X 8 baking dish with cooking spray. Place cauliflower in dish.
Bring cream to a simmer in a small sauce pan. Whisk in cream cheese and mustard until smooth. Stir in 1 c shredded cheese, salt, pepper, and garlic just until cheese melts.
Remove from the heat and pour over cauliflower, and stir to combine.
Top with remaining cheese and bacon.
Bake until browned and bubbly, about 15 minutes.
