Cauliflower Pizza Crust
Lee loves pizza, and I have tried many different healthy crusts. This one is our favorite!
12 oz. pkg. Riced Cauliflower
1/2 c grated parmesan cheese
1/2 c grated cheddar cheese
1/2 c grated mozzarella cheese
2 eggs
1/2 tsp dried basil
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp pepper
Preheat oven to 425. Prepare 2 baking sheets by covering them with parchment paper.
Place the riced cauliflower in a microwave-safe bowl, and cook for 5 minutes. Allow to cool for 10 minutes.
In a small bowl, whisk eggs with basil, oregano, salt, and pepper.
Add the cheeses and egg mixture to the cooled cauliflower. Mix well.
Distribute the mixture evenly, half on to each baking sheet. Press mixture flat, and thin as possible. I try to shape it into a rectangle.
Place both sheets into the oven for 10 minutes. Then, take them out and flip the crust over to allow the bottom to brown. Continue baking until both sides are lightly browned and slightly crisp.
Now add any toppings you like. I put a base of pizza sauce, and then choose pepperoni, sausage, mozzarella….anything you like! Then bake for another 5-10 minutes, until the toppings are browned.
