Keto Bread

After many weeks of Keto we are definitely missing bread! This recipe is from Jennifer Marie Garza’s book Easy Keto for Busy People. Later this week, I will be trying to make this dairy-free for my Mom. I will keep you posted!

1/2 c butter (room temperature)

8 ounces Cream Cheese (room temperature)

8 eggs (room temperature)

2 1/2 c almond flour

1/4 c coconut flour

1 1/2 tsp baking powder

(Jennifer’s recipe calls for some dried herbs-1 tsp: rosemary, sage, and parsley. I omitted these the first time I made it. I will try some herbs next time!)

Preheat oven to 350. Spray 3 mini loaf pan (or one standard loaf pan) with cooking spray.

In a mixing bowl, combine butter and cream cheese and beat until smooth. (Add the herbs if you are using them.) Add the eggs and continue to beat until smooth. With the mixer on low beat in the almond flour and baking powder. The batter will be thick.

Fill the pans about halfway with the batter. Bake until the tops are golden brown and toothpick comes out clean. (35 minutes for small pans, 55 minutes for the larger loaf) Let cool for 5 minutes before turning out onto a cooling rack.

This is great plain, or toasted!!
