Cooking is love
I love to cook and bake for other people. It is so much fun to think about what they might enjoy, and make it just for them. Since I have seen so little of my family during this pandemic, I decided to make a trip to see my Mom and one of my sisters this week. It was socially distant with masks, but I just wanted to bask in their presence. Of course I would not go empty handed, I brought food.
For my Mom, I made Keto Bread, using special ingredients that I know my Mom would love. I made two loaves, so she could freeze one and save it for later. The next day she sent me a picture of her French Toast breakfast, made with the Keto Bread I had made for her. What a joy!
For my sister and her husband, I made Ina Garten’s Cream of Fresh Tomato Soup. It is not your average tomato soup, it is filled with flavor and richness! I also made Parmesan Toasts (see recipe below) to dunk into the soup (and can also be wonderful croutons for a salad). I also made Ina Garten’s Apple Turnovers. These are one of my favorite desserts to make for people because they look so fabulous. The dough is simply pastry dough, so it’s all about the apple filling.
Parmesan Toasts
1 baguette
olive oil
salt
pepper
1/4 c parmesan cheese
Preheat oven to 375
Slice baguette diagonally, into 1/4” slices. Lay the slices out an sheet pans lined with parchment paper.
Brush olive oil on each slice, sprinkle with salt and pepper.
Top each slice with parmesan cheese.
Bake for 10-15 minutes until crisp and golden brown.
Serve at room temperature.
