Socially Distant Fun!

Like you I am running out of ways to ‘make our Saturday nights fun again’!!

Here are a few things we are doing this summer:

  • We were invited to a friend’s backyard for an outdoor meal, and a movie viewing. This turned out to be a great evening! This woman has a beautiful yard. So aspirational!! She has beautiful flowers, beans, lettuce, and melons! Fun to see the spoils of her hard work. We ordered dinner to be delivered. Then the highlight was the movie. They have an incredible screen outside with a great sound system. We watched Hamilton from the Disney Channel!! Lee and I were lucky enough to see Hamilton in person a few years ago. This opportunity to see Lin-Manuel Miranda as Hamilton was incredible!! Sure I was bitten by many mosquitos….but it was an incredible evening!!!

  • We planned to go to an outdoor restaurant with friends. This is the first time I have eaten at a restaurant since February!! It was fairly empty, and the waiter was great. The best part was relaxing outside with a glass of wine and friends. I so appreciated the joy of good conversation, a warm evening, and a nice glass of white wine. I realized that I really missed the alchemy of friends and wine…..

  • We were invited to a friend’s backyard for an outdoor meal and a bonfire. I offered to make dessert. I made Ina Garten’s ‘Salted Carmel Brownies’ (See ‘Sharpening Your Saw?’). We ordered Mexican food, and enjoyed hanging out with good friends. Sooo great to catch up with all they are doing. We enjoyed the brownies which received RAVE reviews from our friends!! The bonfire was wonderful. Such a great way to end the evening talking and watching the fire. I have missed our friends.

  • We invited friends for a socially distant meal at our house. I decided to make Keto Tortilla Chips as an appetizer. Our friends LOVED them! They could not believe they were low-carb!! We ordered pizza, and I made a big salad with Ina Garten’s Buttermilk Ranch Dressing. Our friends loved the dressing too! (I even sent some home with them!) For dessert I made ‘Easy Keto’ Lemon Pound Cake. {This recipe made one loaf of pound cake, and 6 cupcakes.} This was lemony, moist, and delicious! We ended the evening sitting around our outdoor bonfire. Good foods, and socially-distant friends…great evening!
