Egg Roll in a Bowl
I have shared many recipes from Jennifer Marie Garza’s book Easy Keto for Busy People. This one is now one of my favorites!! It is easy to make, and the flavors are delightfully similar to Chinese food! Lee and I enjoyed this so much!
Egg Roll in a Bowl
1 tsp olive oil
2 eggs, lightly beaten
1 tsp sesame oil
1 lb. ground pork (You can substitute any protein-beef, chicken I am trying shrimp this week!)
1 1/2 tsp salt
1 tsp pepper
1 c chopped green onions
2 tbsp fresh grated ginger
1 tbsp minced garlic
16 oz. tricolor coleslaw mixture (this is a huge time saver!)
1/4 c coconut aminos or soy sauce
Sesame seeds, for garnish (if you like)
In a small skillet over medium heat, heat olive oil. Add the beaten eggs and cook stirring until scrambled. Set aside in a bowl.
In a large skillet over medium-high heat, heat the sesame oil and add the ground pork, salt and pepper. Cook breaking up the pork with a wooden spoon, until browned (6-7 minutes). Add 1/2 c green onions (save the rest for garnish), ginger, and garlic. Lower the heat to medium and continue to cook, stirring for 3 minutes.
Add coleslaw mixture, and cook stirring until the slaw is tender (about 10 minutes). Pour in soy sauce and scrambled eggs, and cook stirring until cooked through (about 1 minute).
Transfer to serving bowls and top with green onions and sesame seeds.
