Waffles & Chaffles
Have you heard of ‘Chaffles”? It is a waffle-like wrap that is keto, made with eggs and shredded cheese. My first attempt with these was to watch this video (Keto Chaffle Video), and borrow my mother in-laws waffle maker to try them. Lee LOVED them! I grilled some meat and cheese and placed it between the chaffles. A big hit!!
The next step was to order a mini waffle maker. We chose a cute one from Nostalgia ($20 on Amazon).
I also followed up with fluffy waffles!
4 ounces cream cheese
4 eggs
1 tbsp butter (melted)
1/4 c coconut flour
1 tbsp stevia
1 1/2 tsp baking powder
1 tsp vanilla extract
1/4 tsp ground cinnamon
Preheat your waffle iron, spray with cooking spray.
Combine cream cheese, eggs, melted butter, coconut flour, stevia, baking powder, vanilla, and cinnamon in a blender. Blend on high until smooth (about 1 minute).
Pour about 1/4 c (or less if you are using the mini waffle maker) onto the hot waffle iron. Spread it out a bi with a spoon. Cook until browned.
Top with butter and sugar-free syrup!
