Pull-Apart Pizza Bread

Lee LOVES pizza. Keto eating is tough on a pizza lover, until I found this recipe in Easy Keto for Busy People by Jennifer Marie Garza. I surprised Lee with this for lunch one day. He LOVED it!!

1/2 C Parmesan Cheese

1 1/2 c almond flour

1 tbsp baking powder

2 1/2 c shredded mozzarella cheese

2 ounces of cream cheese

3 eggs beaten

1/2 shredded cheddar cheese

1/2 c sliced pepperoni

Preheat oven to 350. Spray Bundt pan with cooking spray. Have parchment paper ready for placement of dough.

In a small bowl, mix the almond flour with the baking powder until fully combined.

In a medium (microwave-safe) bowl, heat mozzarella cheese and cream cheese in microwave until melted (about 1 minute). Add the almond flour mixture and eggs. Mix until it forms a sticky ball. Transfer to the parchment paper.

Sprinkle the dough with some additional parmesan cheese to keep the dough from being too sticky. Cut the dough into 32 pieces. Roll each piece into a ball, and then roll it in parmesan cheese. Place 16 of the balls at the bottom of the bundt pan. Sprinkle 1/2 the cheddar cheese over the dough balls. Layer half of the sliced pepperoni over the cheese. Repeat the layering with the rest of the dough balls, cheddar, and pepperoni.

Bake for 25 minutes, until golden brown. Let cool for 5 minutes, invert the pan onto a plate and serve. I served this with marinara.
