Granola Crunch

Somedays I need a great snack, or maybe you are looking for a quick breakfast? This granola is perfect!

1/2 c pecans

1/2 c almonds

1/2 c sunflower seeds

5 tbsp coconut flakes (these are unsweetened)

1/4 c sugar-free maple syrup

1/2 tsp ground cinnamon

Preheat oven 350. Line baking sheet with parchment paper.

In a large bowl, combine everything except for the cinnamon, and mix well. Spread the mixture on the prepared baking sheet, and sprinkle with cinnamon.

Bake for 10 minutes, until golden brown. Let cool for 10 minutes. The granola will harden and become crunchy after it cools.

Granola can be stored in a covered container at room temperature for about 7 days. Enjoy as a snack or with coconut milk for breakfast!
